Ingredients
  1. 1 cup of instant coucous
  2. 1 cup of boiling water
  3. 1/2 cucumber diced
  4. 2 tomatoes diced
  5. 1/4 cup of fresh mint chopped
  6. 1/4 cup of fresh coriander chopped
  7. 2 tablespoons of lemon juice
  8. 4 tablespoons of olive oil
Instructions
  1. Place the coucous and boiling water in a bowl, cover and set aside for 5 minutes, until the water is absorbed. Fluff with a fork and add the rest of ingredients. Stir to combine.
